1/2" chunks. Silver is irrelevant. Get out as much fat as is easy. Don't kill yourself.
Pack it into widemouth jars... pints or quarts.
Burp the air pockets out of it. (I use a butter knife for this)
Leave 3/8" of headspace in the jar.
Add about a teaspoon of salt.
Put the lid on loose.
Pressure can @15 psi for 60 minutes for pints, and 90 minutes for quarts.
When removing the jars from the pot... tighten up the lid ring.
That's MY recipe.
I used to water bath them too. but for 4 hours rather than 90 minutes. Some people say that's NOT safe... but I never had ANY trouble with it.

I do the same as Jabba except I add one small piece of beef fat and instaed of salt I use one beef bullion cube.

Fair warning though... it does STINK up the house. But... you'll be VERY impressed with the product. It's VERY good.
