I wanted to share my recipe for smoked venison tenderloin... Remove tenderloins whole and clean all blood - fat - sinew that may be present. I never use water I just take a paper towel and wipe off any excess blood... I have found that Allegro marinade is great for game meat... they actually have one specifically for game meat; but I was out. I inject a little into the tenderloin Then add about a cup in a zip lock bag and let it marinate for a couple hours in the fridge... I then wrap them in bacon (not so much for flavor, but to keep them moist ) I added a couple chili poblano peppers to one for some heat... Alow them to sit out and come up to room temperature. Set smoker to 190 degrees... I used apple, but I have used mesquite; both are excellent. Place in smoker and cook until the internal temp reaches 140-145 degrees... This is medium rare. I only add wood twice during the smoking process as I have found too much can give it a bitter flavor.... Final product ;D
