I figured this would be good fodder for a guessing game. We took a steer in a few weeks ago to the processor. Pure Bred Angus. Weighed 1299 lbs on the hoof. we'll split it so I can give you the details on my half. So, how many pounds (packaged meat, various cuts, no bone) would you guess I'll get off this half beef?

264.41 lbs for YG1 and assuming you are splitting left/right.
I bet he is a little on the fatter side.

Here's a little more information. Processor says hanging weight was 779 pounds. So my side of beef goes 389.5 pounds. I'll weigh the meat later tonight. I can tell y'all from past experience anything around 300 pounds is high. I'll tally the total cost, too. If anyone is interested, you'll get a cost per pound. Also, the total weight will not include tongue, heart or liver. I can reference that separately.

Here is the tally. The packaged beef weighed 237.0 pounds. Liver, heart and tongue would add another 21.2 pounds. This carcass (or side) was hanging for 22 days. The steer weighed 1299 pounds on the hoof and I paid the farmer $1.52 per pound. That came to $987.24. Add $221.86 for butchering ($25) and processing ($196.86). The total paid for the side of beef was $1,209.10 Divide that out, using the 237 pounds, and it comes to $5.10 per pound!
