I have seen most folks do the long slow boil, hour to hour and a half or so depending on the number of squirrels. Everyone likes them different. I have honestly say I've only had squirrel once and it was many years ago.... sometime in the 1980's I think. They had slow boiled the squirrel in a bit of water with kosher salt. Then, let it cool and dipped it in batter and fried it in bacon fat! I recall it was quite delicious. Found this recipe. I think this forum doesn't like external links. Not sure, but found this on a website with lots of recipes. Bacon Wrapped Squirrel Sent in by Timothy S. Barry.
~ squirrel legs, front or rear, amount depends upon how hungry you are ~ beer ~ garlic powder ~ pepper ~ salt ~ minced onion ~ hickory smoked bacon
Soak the legs in beer for 2 – 3 hours. Remove and drain.
Sprinkle to taste with garlic powder, pepper, salt and the minced onion (or if you have a favorite dry rub for grilled squirrel you can use that instead).
Wrap each leg with bacon. Secure with toothpicks if necessary.
Place on hot grill (charcoal grill recommended for a nice smoky flavor, although a gas or electric grill will do the trick). Cook over medium heat until cooked through, tend to the meat as your cooking to make sure you do not over cook.
Serve with your favorite sides.
Enjoy. So, do they make squirrel bacon? Be some awful thin strips of bacon. Not much fat either! TedCH

Someone on here posted a squirrel chowder, and it was awesome!
I like rabbit a little bit better, but it's all good.
It's still hard to beat a good beef steak.

Squirrel and noodle squirrel and dumpling Squirrel cooked in the crock pot in cream of mushroom soup. Anything with chicken replace with squirrel

I am going to try to fix some Squirrels by this method: First par-boil three Squirrels in water & a pack of Lipton Onion Soup mix, until tender. Then coat pieces with a mixture of milk and a couple of eggs. Then coat pieces with your favorite flavor of "Shake & Bake" place in 350* oven until pieces are golden brown.

Never about thought, but the Squirrel might turn out on the dry side, if not covered.

I won't have anything to hunt with this next weekend, saving up... but i hope I can get a tasty meal at the gathering.
the other squirrel meal I enjoyed years ago was squirrel and gravy. Oh man was that good. Heavenly soft biscuits, spicy cooked squirrel and milk gravy. it was awesome!
