Venison Workshops
A venison workshop sponsored by the Purdue Cooperative Extension Service will be held at the Hoosier Outdoor Experience on Sept. 26 at the Fort Harrison State Park in Indianapolis, free off charge, from 10 a.m. to 1 p.m. A deer will be skinned, butchered and prepared in a variety of ways for participants to taste.
Other venison workshops are scheduled around the state at various locations during September. Call the number below for more information.

I don't suppose it could be video taped?? Seems like something like this could be a valuable tool to have around for all the questions that seem to pop up before, during and after deer season. Plus isn't that the start of the youth season??? IIRRC
Also I didn't see any contact #.....

Great tutorial that you found Dan! Looks pretty familiar for the most part In step/pic #9 I have found that you can exert pressure backwards on that elbow joint and with just a little knife penetration in the backside of center of that joint will let you almost "pop" it two. Then with some slight tendon cuts on the front side it will easily separate leaving a clean joint to work with and no bone fragments from a saw. After removing the backstraps I have also been known to take the meatsaw and just cutoff the ribs with the rest of the meat still on them and fixing them that way. I'd have to look but I know a posted a recipe in the cooking section how what/how I do them.
