I made lamb chops for the first time ever.
I purchased 2-2" thick lamb chops French cut from a farmers market farmer who raises and butchers her own lambs.
I Marinated them over night with fresh Rosemary and Garlic with a little bit of Olive oil salt and pepper.
I seared them on all sides in melted butter in a cast iron skillet for about 90 seconds a side then I transferred the skillet to a 350 degree oven till the chops reached 140 degrees, I rested them for about 15 mins.
The wife made up a batch of the HONEY mushrooms I found the other day and we had that with eggs in the basket and a baked potato.

The fat has a mild lamb flavor and the meat was very tender, the mushrooms and onions were very tasty and all in all I can say I did it. The cost of Farm raised Lamb is pretty expensive so it might be a while before I do this again.

Looks fabulous! Been wanting to try this, price is definitely a sticking point. Maybe someday when I don't have 3 kids in the house. For now pork chops will be my steak.

My wife's family had an annual "sheep roast" for 60-something years. They just quit the tradition a couple years ago. Their chosen roasting method, however, was grill it beyond recognition and smother it with barbecue sauce. It was impossible to differentiate it from the pork that was cooked alongside it. Neat tradition though.
I've bought it a couple times and prepared it rare. Nice to try something different, but I definitely prefer deer.

The only thing you missed is the mint jelly to go along with the lamb chops. Looks great. My grandmother made fantastic mint jelly.

Looks very good as always but were are the circles from the bread they are darn good to eat
You use butter to fry the eggs and bread I butter my bread one side than cut the hole and butter the other side of the circle

We saute' the mushrooms in butter too. Everything is better with butter.
