Mom canned about anything you can imagine. She always pressure canned green beans, tomatoes and tomato juice. For whatever reason, I am pretty sure she cold pack canned pickles, beets, jelly and peppers.

Cold packed these with deer meat but pressure canned.
I have made dill pickles and those were cucumbers packed into pickle mix then boiled. As the jar cooled it sealed the jar

Tomatoes, tomato juice, and fruit/jellies are about the only thing you can water bath.
Everything else has to be pressure canned to 240deg to kill bacteria.
We raw pack venison, then pressure can. Add salt and a beef bullion cube and it's by far the best way we like it other than jerky and salami.
Chicken breast chunked up with a chicken bullion cube and salt is also excellent.
My canning started after I lost all my deer to a 3yo chest freezer going out and I didnt catch it in time. 😡

A relative I know done(cold packed)250 quarts of green beans one summer 10 + years ago and they just ate the last jar last year.
