I love squirrel hunting but, don't really enjoy eating or cleaning them. I have cleaned a few after going and placed them in the freezer to give away.

Pretty much quit hunting them, although I need to take care of the ones by the house that like to climb up in my excursion. Just haven’t found a way to cook them that I really like. If my son asks to go then I will and we will not waste what we kill, but I don’t do it near as much as I used to.

When I was a kid I use to hunt them all the time. My 2 brothers that hunted and my dad would kill 75 to 100 apiece for years. Mom would have to make 5 or 6 a meal and we would fight over the heads to eat the brains and tounges. I don't go but maybe once or twice a year now.

I just hate killing them unless I have someone to take them.

Depending on how many packages of squirrels I have left at this time, I will throw them in a slow cooker and make pulled BBQ out of them if I need to clean out the freezer of any from last season. If I've timed it all out pretty good, I won't have enough left to justify doing that with.

I just finished up a bowl of squirrel stew for lunch. Cut up a squirrel into fryer pieces; add to a covered baking dish along with a can of your favorite soup. Today was Loaded Baked Potato. You can use Cream of Mushroom or anything else that you like. Put in the oven for 2 hours at 350 degrees, or 2 hrs & 10 minutes if you don't preheat the oven. You might have to go even a hair longer if you kill The Ancient One. Transfer to a large bowl and let it cool some. Grab a plate for the bones! I fish out and eat the squirrel first and then finish up the soup. Today's squirrel was not a real old one, so when I was picking up the pieces from the soup the pieces were falling apart it was so tender!! I first tried this recipe while trying to do something other than the slow cooker for the elderly squirrels that I occasionally find. I used to be disappointed when I would pick up an old fox squirrel, but now it doesn't bother me one bit to kill an old squirrel! Looks like only a couple more to clean out of the freezer so that it is ready for restocking.

I am planning to get out once or twice next week before the State Fair Poultry Show and school starts.
I've actually never cleaned a squirrel myself, always found myself too chicken about the proper way to make the right cuts to do it. But I love eating them! A bit like a sweetish meat, unless you get the old tough ones. Had one of those once. The meat was a bit like eating tasty toothpicks and was very hard to chew.

The breading seems to help make tough squirrels easier to eat. They get fried in olive oil or whatever oil you like to use. The baking is done in some water I believe. We only use the limbs. My dad figures there is not enough meat on the rest of the squirrel to warrant doing anything with it. The breading also helps with the texture and flavor. I've found it makes the sweet taste of squirrel meat even better, especially when fried.

I've tried to persuade him before to use as much of the squirrel as possible but he's pretty set on the idea that the legs are the best.

The best way to learn how to clean squirrels is have someone that really knows what they are doing show you. Believe me, once you learn the proper, easy way and do it several times, it's unbelievably easy,2 minutes per squirrel tops. For older or just about any fox squirrel,a pressure pan or instant pot is your best friend.
