I have a portable blind that sits on a hay wagon. I have been placing it in the same location in the same field for a few years now. The location chosen is based on safety more than anything else.
There is a woodlot next to the field that I do not hunt. However, if the hunter that does hunt those woods has mineral blocks set out, does that affect me and my rights to hunt on my property?

It is difficult to give a definite yes or no to these types of questions without knowing the exact property in question. For example if you are hunting a fence line and the neighbor has a mineral block out on the adjoining property but it is just across the fence line then it would be difficult to say you are not hunting a baited area. If the mineral block is 500 yards away and not visible from your hunting blind or stand then I would say with confidence that you are not hunting a baited area. The best thing to do in these situations is to reach out to your local Conservation Officer and have them assess your specific situation.
