I have a big "gar" fish mounted and it's about 5 years old. It's getting a yellowish orange between the scales I'm wondering if the mount is going bad or if it's rotting.
Also have a bowfin that's cracking and the same yellowing are my mounts bad?

Sounds like the fish was not degreased before it was mounted. Gar have a lot of fat that needs to be removed. The yellow is probably the grease bleeding through the skin.

X2 take them to a taxidermist and get them refurbished
