First, thanks for the reply. I think I have this mostly figured out. Since I knew I was moving, I never renewed my NC hunting license in 2016, so I am covered there. Also, I contacted the NC Wildlife Resources Commission, and asked about non-resident landowners. They told me land owners can hunt without purchasing a license regardless of what state they reside in. So it appears I'm still covered. My only remaining question is, how does the deer checking/registration process work? Won't I need a license number to check a deer?
I have every intention of buying a license as soon as 60 days go by, but I just want a chance to deer hunt in the meantime. Thanks again!

When you check the deer in you have "landowner" as an option which will bypass the license number requirement. The hunting guide will provide information on completing your temporary transportation tag. Good luck, be safe, and let me know if you have any additional questions.
