I wanted to pass along something for you to try.
On removing the "silverskin" or sinew from the backstaps, First "filet" the backstaps off the deer hanging........whole. One on each side.
Put the backstap on the table, sinew side up and make a starting cut between the sinew and meat on the BIG end of the backstap. Just get it started and make sure its completely from top to bottom.
Flip over the backstap, and using a thin bladed knife.....I use a regular filet knife, skin that rascal like it was a big bass. I hold the sinew down with my thumb on my left hand and filet the "SKIN" off just like I do for a bass.
I can remove the sinew from both backstraps in about a min and a half.
Great of you to help others out though... opens REALLY slow on my dial up so I didnt get to read it all but saved it.
FYI, Ive butchered deer for 15 years commercially. Usually doing 200-300 each fall.
