A friend of mine likes to hunt but doesn’t like venison and has offered me any he may kill. If he harvests and checks the deer in, does he need to also accompany the carcass to processor or is the confirmation number and tag all that is needed for me to take it?

Once the deer is legally checked in, the deer is the hunter's personal property. He may gift it to whomever he wishes. The receiver of the gift can deliver it to a processor.
