Most things I do have hours attached to them I like my smoker but someday I will burn it out as much as I use It

Most things I do have hours attached to them I like my smoker but someday I will burn it out as much as I use It I’m really interested too. Of course there was no rain this afternoon so I could’ve use it. I’ll get a few more racks and try them out. It’ll do up to 6 racks at a time. They cook hanging vertically instead of laying flat on a grate.

I smoked my second brisket this past Sunday. I can’t figure out why many people think brisket is so difficult to do and easy to ruin. I did quite a bit of research before smoking my first one and just got aggravated. Everyone has a different opinion. I just decided to follow instinct and experience.
I did buy a more expensive piece at Sam’s this time. It was trimmer (less fat) and had more consistent thickness. I think the extra money was worth it, especially considering that I didn’t have to trim fat for 20 minutes. I coated it all over with sea salt, pepper, and whatever beef rub I grabbed from the cabinet. I smoked it for six hours at 225 and then another three at 275. I sprayed it with apple cider vinegar several times while cooking. I removed it from the smoker and placed it in a cooler. Put a layer of paper towell on the top and then packed with bath towels. Let it sit for another three hours and then enjoyed.
Funny side note. Woke up at 5:30 to start smoking. I walked out of the garage and heard a faint growl. There was a opossum curled up under the gas meter. There was about a 20 pause “what the hell do I do now?” Stare down. I remembered that the pellet gun was in the garage. I took one step and it was gone.I have no idea why it was near the house.

Put some ribs in the Orion smoker. Should be done in about an hour from start time. Interested to see how these turn out.

Here is the finished product. Didn’t expect much smoke flavor, but it’s definitely there. I used only hickory for these. Gave them a taste test and they are actually pretty tender and delicious. I am satisfied with these results. Just so quick it’s hard to believe.

Should of took some photos but I cold smoked some pork chops today than put them in the crockpot with red onion garlic sea salt fresh ground pepper a pepper for a touch of heat turned out dang good
Also cold smoked some green peppers from the garden than filled with venison burger onion garlic salt pepper another pepper for a touch of heat and cooked in the oven for about 45 minutes sprinkled with crumbled blue cheese with about 15 minutes to go tomorrow’s supper along with fresh sliced tomatoes and water melon for dessert both from garden
My belt got tight just typing this

After further review from myself and family the electric smoker is much better. The end piece I taste tested was great, but the rest, not so much. Definitely will be using the electric from now on for ribs. Really the best thing the Orion is good for is chicken. May end up just getting rid of it. Have too many cooking appliances on the deck any way.

Was thinking same thing! I got a small pork shoulder in, wrapped in bacon. Forgot to take fore pic, but will take aft. On the home stretch now. Just checked, at 185deg, going on 19hrs. Just turned it up full blast to 275deg to hurry the finish. 195deg internal is good, but I think 200-205deg internal is better.
I am trying this one without juice in the tray.

Should of posted photos I did a tenderloin today nothing fancy just Lawry’s on it with a few strips of bacon smoked with apricot wood

Got 20 pounds of pork butt on now. Go to 205 temp. Much better results. Just got done. 14.5 hours. Pecan wood.

Too many things on the hot plate. Forgot the pic. Lol. Finished at 197deg, couldnt wait any longer. One hour of resting, then it fell apart like it should. We cut up the bacon pieces and mixed that in when we added sauce. Using G Hughes sugar free. It is extremely good! We have also tried sugar free Sweet Baby Ray's, and its great as well.
